The objective of this stage is to study commercial enzymes. Specifically, the objective was to determine the need and feasibility of conditioning three commercial enzymes with different oils, and then to verify enzymatic activity using two distinct methods: synthesis/re-esterification activity and esterification activity. The results of the conditioning tests were analyzed using the free fatty acid content during the process. Activity tests were performed using esterification reactions, also verifying the free fatty acid content at the end.
